			<content:encoded><![CDATA[<p>Last night I got together with a few friends for dinner and games.  We are so used to going out when we want to hang out that this was a nice change.  We were able to take our time and be as loud as we wanted and had fun playing games we couldn&#8217;t have played otherwise.  We had a wonderful meal and fellowship.  I have made this recipe many times in the past and every time I do, I get requests for the recipe. Last night Martha Margaret (sister in law and dear friend) made it and it was delicious!  I thought I would share the recipe.  I hope you enjoy&#8230;we certainly did!</p>

<h3>Creamy Chicken Enchiladas</h3>
<ul>
<li>2 (10 oz) cans of diced tomatoes and green chiles, undrained (I use Rotel mild)</li>
<li>2 cups of chopped cooked chicken (I usually will just buy the canned chicken but you can also get a rotisserie or of course cook the chicken yourself :)</li>
<li>1 (8 oz) pkg of cream cheese</li>
<li>Approx 5 green onions, chopped (chop the green part, not the bulb&#8230;in case you didn&#8217;t know)</li>
<li>1 (8 oz) container of sour cream</li>
<li>8 (12 inch) flour tortilla (sometimes I will use more smaller ones)</li>
<li>2 cups shredded Cheddar or Monterey Jack Cheese</li>
</ul>
<ol>
<li>Stir together 1/4 cup of Rotel, chix, cream cheese and green onions.  Stir together remaining Rotel and sour cream in a separate bowl; Set aside.</li>
<li>Microwave tortillas on high 15 sec or until warm</li>
<li>Arrange chix mixture evenly down center of tortillas; Roll up and place seam side down in a lightly greased 13&#215;9 ince baking dish</li>
<li>Bake,covered with aluminum foil, at 350 deg. for 30 minutes (they won&#8217;t necessarily be brown, you are really just trying to warm the filling).  Pour sour cream mix over enchiladas; Top with cheese and bake for 10 more minutes.  Let stand for about 10 minutes after getting out of oven.</li>

			<content:encoded><![CDATA[<p><img src="http://www.bencotten.net/wp-content/uploads/2007/11/cookies_sm.jpg" alt="cookies_sm.jpg" align="left" />This is one of my favorite chocolate chip cookie recipes.  I don&#8217;t use this one as my &#8220;normal&#8221; recipe because it makes a lot of cookies and it is a little more involved.  HOWEVER, they taste amazing! It is definitely the best cookie recipe I have for consistency and taste.  I discovered this week that you can freeze the cookie dough to make at a later time.  This is great especially with this recipe because it makes a good amount of dough (of course you could also split the recipe but that&#8217;s just too simple :) .  To freeze the cookie dough, I lumped them out on a cookie sheet as I would to cook them, then put them in the freezer.  Once they were in there for about 15 minutes, I took them off the sheet and put them in a freezer bag.   You can write on the freezer bag with a permanent marker the date you made them and the temp and time to cook them at.  Ok&#8230;now for the recipe:</p>

<h3>Mrs. Field&#8217;s Chocolate Chip Cookies<u><strong> </strong></u></h3>
<ul>
<li> 2 bags of semi-sweet chocolate chips*</li>
<li>1/2 bag of milk chocolate chips *</li>
<li>4 sticks of butter</li>
<li>4 eggs</li>
<li>2 cups brown sugar</li>
<li>2 cups white sugar</li>
<li>5 cups oatmeal</li>
<li>4 cups flour</li>
<li>2 tsp baking powder</li>
<li>2 tsp baking soda</li>
<li>1tsp salt</li>
<li>2 tsp vanilla</li>
</ul>
<p>-Preheat oven to 375.  Mix butter, sugars, vanilla and eggs one at a time with a mixer.  In a blender, blend the oats until they are a powdery consistency.  Add baking soda, powder and salt into the blender.  Mix the flour and the oatmeal mixture.  Pour flour mix into the main batter a little bit at a time, mixing as you go.  Stir choc. chips into the batter.  Bake for 6-12 minutes.</p>
<p>*I sometimes change the amounts and types of choc chips based on what I have.  This past time I made them I used one full bag of each kind of cc and they were very good.</p>

			<content:encoded><![CDATA[<p>I came across this wonderful shrimp dish over a year ago and have made it on numerous occasions since.  Every time I make it I get remarks that it is like something from a restaurant.  It is actually surprisingly easy to make (with the exception of peeling the shrimp).  It can be a little bit on the expensive side if the shrimp is not on sale, but shrimp goes on sale a lot (at least where we live) and it really is worth the expense&#8230;.especially if you are having company.  It is one of those dishes we never have left overs with because it gets gone before the night is over.  We like to call it &#8220;That Yummy Shrimp Dish&#8221; but the official name is Garithes Yiouvetsi (no idea how to pronounce that!).</p>
<p align="center">
<h3>Garithes Yiouvetsi</h3>
</p>
<ul>
<li>4-6 tablespoons extra virgin olive oil</li>
<li>1 medium onion, finely chopped</li>
<li>1 cup chopped green onion</li>
<li>4 cloves garlic, crushed</li>
<li>4 cups chopped, peeled tomatoes (I used canned tomatoes)</li>
<li>1 cup dry white wine</li>
<li>1/2 cup chopped fresh parsley</li>
<li>2 tablespoon chopped fresh oregano</li>
<li>salt and pepper to taste</li>
<li>2 pounds large uncooked shrimp, peeled</li>
<li>8 ounces crumbled feta cheese</li>
</ul>
<ol>
<li><span> Heat oil in a skillet over medium heat. Saute onion in oil until transparent. Stir in green onions and garlic; cook, stirring frequently, for 2 more minutes. Stir in tomatoes, wine, parsley, oregano, and salt and pepper to taste. Cover, and simmer gently for 30 minutes. </span></li>
<li><span>                                 Preheat oven to 500 degrees F (260 degrees C).                             </span></li>
<li><span> Spread half the sauce on the bottom of a large oven dish. Arrange shrimp evenly over sauce, and pour the remaining sauce on top. Sprinkle with feta cheese. </span></li>
<li><span> Cook in preheated oven for 10 to 15 minutes, until shrimp are pink and the feta is melted and lightly browned. Sprinkle with remaining parsley, and serve immediately.</span></li>
</ol>
<p>I serve it with rice (Ben and I like serving it over the rice) and a nice bread.</p>

			<content:encoded><![CDATA[<p><img src="http://www.bencotten.net/wp-content/uploads/2007/10/apples.jpg" title="apples.jpg" alt="apples.jpg" align="left" height="131" width="170" />I know Ben is probably shaking his head that I am making his former blog a girly blog at times, but those of you who know me know that I love to cook and find new recipes.  I recently came across this <a href="http://overwhelmedwithjoy.blogspot.com/2007/10/holiday-cooking-blogger-style-2nd.html" target="_blank">blog</a> that offers a platform to share holiday seasonal recipes.</p>
<p>So, here is a wonderful recipe to use for the upcoming fall season and holidays.</p>

<p><u><strong>German Apple Cake</strong></u></p>
<ul>
<li>5 baking apple or cooking apples</li>
<li>5 Tbl sugar</li>
<li>2 Tsp cinnamon</li>
<li>3 cup unsifted all-purpose flour</li>
<li>2-1/2 cup sugar</li>
<li>1/2 tsp salt</li>
<li>4 eggs</li>
<li>1 cup vegetable oil</li>
<li>2 tsp vanilla</li>
<li>1/3 cup orange juice</li>
<li>1-1/2 tsp baking soda</li>
<li>1-1/2 tsp baking powder</li>
<li><em>1-1/2 cup confectioner&#8217;s sugar</em></li>
<li><em>2 Tbl soft margarine or soft butter</em></li>
<li><em>1-1/2 tsp vanilla</em></li>
<li><em>1-2 Tbl water</em></li>
</ul>
<p><em>The italicized ingredients are for glaze.</em></p>
<ol>
<li>Grease and flour a 10 inch tube or bundt pan.  Preheat oven to 350 degrees.</li>
<li>Peel apples, core and thinly slice.  In bowl, toss apple slices with 5 Tbl sugar and 2 tsp cinnamon; set aside.</li>
<li>In large bowl, mix together flour, sugar, salt, eggs, oil, vanilla, orange juice, baking soda and baking powder.</li>
<li>With mixer, blend together on low speed for one minute.</li>
<li>Clean down side of bowl with scraper.  Increase speed to medium and blend for three minutes.  You will have very thick dough.</li>
<li>Fill prepared pan with alternating layer batter and apples.  Make total of 3 batter layers and 2 apple layers.  Start and finish with batter.</li>
<li>Bake for 1-1/2 t0 1-3/4 hours or until cake tests clean (I put a pan on the rack underneath the rack that I put the cake on to catch any spilling over..I had a little last time).</li>
<li>Cool on rack for 10 minutes.  Invert cake, remove pan.  Allow cake to cool on rack.</li>
<li>Make glaze: Mix confectioner&#8217;s sugar, butter, vanilla and water until smooth.  Drizzle on cooked cake (I usually do it is still a little warm).</li>
</ol>

			<content:encoded><![CDATA[<p align="left"><img src="http://www.bencotten.net/wp-content/uploads/2007/09/popcorn.jpg" title="popcorn.jpg" alt="popcorn.jpg" align="left" /> Ok..so I know&#8230;two posts in one day&#8230;I am becoming a true blog nerd, but hey it&#8217;s fun!  <a href="http://crazyhipblogmamas.com/?p=394" title="Crazy Hip Blog Mammas" target="_blank">Crazy Hip Blog Mamas</a> has a Popcorn Recipe Rally going on at her blog.  Since I LOVE popcorn, I thought I would join in.  Growing up, we used to have Sunday night family nights where we would watch a movie and have a dinner of popcorn&#8230;such fond memories.  I don&#8217;t do a regular thing of Sunday night, but about once a week I sit down with my oldest daughter and watch a movie or spend time playing a game.  She always begs me to make popcorn &#8220;like a theater&#8221;.  Her favorite is peanut butter popcorn though.  She will beg for it and occasionally I will give in.  It creates a sticky pot (my husband hates it), but it tastes wonderful and it is worth the huge grin I get when I make it.  So here goes..</p>
<p><strong>Peanut Butter Popcorn</strong></p>
<ul>
<li>1/2 cup light corn syrup</li>
<li>1/2 cup sugar</li>
<li>1/2 cup peanut butter</li>
<li>1 tsp vanilla</li>
<li>6 cups of popped corn (give or take)</li>
</ul>
<p>Heat the sugar and syrup in a pot until the sugar is melted.  Add the peanut butter and melt (be careful not to burn).  Take the pot off the stove and add the vanilla.  Pour over popcorn slowly, stirring as you go to coat the popcorn.</p>
<p>As you can see, this isn&#8217;t the healthiest treat but it is a special treat for the kids (and mom)!</p>
